Saf Restaurant
2006 (Ongoing): Partner, Executive Chef and Director of Food and Beverage; full restaurant development, design, system placement, personnel training, rotating seasonal menus. Ongoing PR and media events. SAF, Istanbul is the first restaurant launched out of a series of them throughout Europe in 2007. SAF - meaning Pure & Innocent in Turkish, also standing for Simple Authentic Food offers a innovative culinary concept, showcasing raw cuisine. At SAF, we are dedicated in using the purest plant based ingredients that emphasize local and seasonal availability to bring our guest a fully unique and authentic organic dining experience. Present Moment Café
2006: Full restaurant consulting and designing of restaurant with kitchen layout, menu development, systems placement and thorough training of all kitchen staff. The Cliffs Communities
2006: Consultant / Educator in developing and guiding the direction of wellness in all the clubs, and wellness centers; Implemented Raw and Living food items on all restaurant menus and offering on-going services with education of the Cliffs management, residents and public in the areas of basic vegan nutrition, science behind the preparation, and intensive training with the existing chefs and kitchen staff. Counter Restaurant and Wine Bar
2005: Menu and Culinary Consultant; re-design of existing menus, hiring and training of Chef in Raw Cuisine, and promotional and media events. Counter is one of the biggest vegetarian hot spots in the city, offering over 150 organic and sustainable wines and organic, herbal infused martinis.
